VEGGIES
BEAN/ONION
1 large onion
2-3 cloves garlic minced
1 can pinto beans
Sauté onion and garlic
Add beans, heat and serve
SQUASH-ONION-TOMATOES
Some squash or zucchini sliced
Onion sliced
Tomatoes Sliced
1 can tomato sauce
Some cheese
Make layers of squash or zucchini, onions, and tomatoes in
a baking dish
Add tomatoes sauce on top
Sprinkle cheese on top
Bake your choice of temperature and time
depending on how "well done" you like your veggies.
MICROWAVE CORN ON THE COB
Cut off the ends of the cob leaving enough at the base
to keep the shuck from coming off. Remove the shuck leaving
only one of two layers. Soak the ears 3-5 minutes in water.
Put in micro, cook on high, about 3 minutes per ear.
Let sit. Remove the shuck and silks (I like to leave a few silks in order to have
complaints)
Serve.
DESSERTS
KYLE'S FAVORITE RHUBARB PIE
1 Crust 9 inch with crust for top
Combine:
4 cups rhubarb
1.66 cup sugar
.3 cup flour
Dash of salt
Fill pie crust with mixture
Dot with 2 TBLS of butter
Put top crust on and make holes with fork
Bake 400 for 50 minutes
Great right out of the oven topped with vanilla ice cream.

1 stick margrin
Sugar
Flour
Baking Powder
Milk
Fruit - your choice in sugar surup
In large pyrex cooking bowl melt margrine
While waiting:
Mix
JAMS AND JELLIES Yield 3 Cups
Microwave Strawberry Preserves
1 package (16oz frozen Strawberries with sugar added)
1 T. Lemon juice
1 C. sugar
3 T. powdered pectin (.5 box)
Place strawberries in a 2 quart casserole. Cook in microwave 2 minutes on high. Stir in pectin gradually. Cook 2 minutes or until a few bubbles surface.
Stir in sugar and lemon juice. Cook again for 5 to 6 minutes stirring every 2 minutes. Pour into glass jars, cover, and refrigerate.

TIPS
To Freeze meals for later:
- Divide in appropriate portions
- Put in freezer bags (date and label)
- Mash flat and put in freezer with a piece of
paper towel between
For Pizza with that special taste:
Add (replace) tomato sauce from your favorite recipe
with blended fresh tomatoes.
Pizza dough:
- Use your bread recipe
- Use less water
- Do not kneed too much. Leave a little lumpy
- Cover in container with lid (no cloth)
- Let rise then roll out.
For extra good corn bread:
Add more milk to your recipe.
Cook lower and a little longer
BREAD VARIATIONS
For whole wheat mix half whole wheat with white flour.
Add Grape nuts for variations
Replace on cup of flour with oat meal
FREEZING FOR LATER USE
We often freeze what we will reheat later in the
same bowl. After freezing we take the meal out of the
bowl and put it in a freezer bag. This means we do not
have to have all our bowls in the freezer. When we reheat
we just put the meal in the proper bowl and serve in that bowl.
Flours and sugars keep great in gallon jars
STORING JARS
After the jar is washed and dried, hang a strip of paper towel
over the lip of the jar, then put the old lid and ring on. This
will serve as a wick to keep moisture balanced. You will also
know which jars you cleaned and are ready for use later.
GALLON JARS are good for storing cereal you buy in larger
quantities.

STORING
1 Gallon freezer bags hold 5 pound bags of sugar and flour
to keep bugs and moisture out while in storage.
Marinating:
For a tasty variation for chicken fried steak.
1. Prepare steak then put cloves of garlic between
steaks and let sit for awhile
2. Add a little Red Wine Vinegar between each steak.
