Sausage Casserole
Serves: 4-6

1 lb sausage
1 large onion chopped
1 large green pepper chopped
2 cups chopped celery
1 envelope dry chicken noodle soup
2.5 cups boiling water
.5 cup uncooked rice
1 can water chestnuts (makes better but optional)
.5 cup slivered almonds (makes better but optional)

Cook sausage until brown and crumbly
Sauté onion, green pepper, and celery until tender
Add envelope of chicken noodle soup to boiling water
Add rice. Cover and cook 15 until rice is done.
Add cooked veggies, and chestnuts to soup-rice mixture.
Put in baking dish, sprinkle top with almonds, cover and bake for about one hour.
