Banana Preservers
from Juanita

9 cups of very firm (not green) bananas in ¼ inch slices
5 cups sugar
5 cups water

Put all ingredients in a heavy non-stick pot
Bring to boil
Put on simmer or a bit hotter without a lid
Cook for 4.5 hours

The bananas will turn dark red

Store in jars
We often freeze portions for use later.
